Sarah May Gruber 5 Can Southern Casserole 
 
 
My favorite casserole to serve to a special fella is my 5 Can Southern casserole. Just go to the pantry, pick out any 5 cans of vegtables, put them in a casserole dish, pour in a can of cream of chicken soup, smother with Velveta, sprinkle dried onion bits on top and bake at 325 for 45 minutes.

Candy Coated Pecans
 Candy Coated Pecan Halves

1 cup brown sugar
1/2 cup white sugar
1/2 cup sour cream
1 teaspoon vanilla
dash cinnamon
2 1/2 cups pecans (or walnuts) - best if roasted prior to using in recipe but not necessary

Combine the two sugars and sour cream and cook to soft-ball (234 degrees). Add cinnamon and vanilla and beat (with wooden spoon) until it begins to thicken. Add nuts. Stir until well coated. Turn out on well buttered cookie sheet. Separate into pieces. Makes 2 dozen.

I break into pieces once it has cooled a bit. I also find that it makes more than the 2 dozen advertised....that is why I say to add more pecans if the mixture is there to cover them.


Collard Green Cupcakes
Uncle Hargus' Thermo-Nuclear Collard Green Cupcakes

you'll need:

1 Bunch Fresh Collard-Greens
4 Cups Martha White Yellow Cornmeal
1 Cup   martha White Self-Rising Flour
1 cup Bacon Grease w/ bits of real Bacon/or Ham
1 Garlic Clove chopped
4 Chicken boullion cube crushed
2 Tblsp Honey
3 Lg Eggs
1/2 Cup Half& Half
4 Garden Fresh Spring onions, Chopped/Chives & all
Mix all in Large Bowl

2 Cups Crisco/or Lard
1 Can Spam
Blender

Grease cupcake tray, & lay in Collard-Green leaves as the cupcake wrapper.

Ladle batter into Collard-Green Wrappers, Full to top for a good Crown

Place in oven for 11 minutes @ 600* (Now this is important.  Have the Power company run the wires directly to the back of the stove; otherwise the wires will overheat inside the stove & catch on fire.  Now I've already burned down 3 restraunts by Not using the right wires to get the tempature right.... so get an electrician & get this right)

Remove Cupcake pan from oven , being careful not to singe eyebrows from the heat.

Take can of spam, 2 Cups of Crisco/Lard.  can add Pork craklin's if desired.  Place in blender.  Liquify to a batter consistency.

Collard-Green Cupcake Tops are still Red Hot & crispy from the heat... Spoon on blended spam like it's a Glaze.  Will cook on the Cupcake tops & soak-in some , leaving a frosting top.

Cool.  Serve w/ ANY Southern cooked meal..... Cooked by a Good Southern Woman.  ie.... Fried Chicken & Mashed Potatos w/ lima beans, Squash, Tomatoes.  Ect.... Great w/ Butterbeans, Ect..... They some fine eatin' !




Becky's Famous..
Mississippi Mud

2 sticks butter- softened
2 cups sugar
4 eggs
1 1/2 cups plain flour ( sifted)
1/3 cup cocoa
1/2 tsp salt
1 tbsp vanilla
 1 cup chopped nuts ( I use walnuts)
1/2 bag miniature marshmallows

Preheat oven to 300 degrees. Cream butter  and sugar together, then add eggs one at a time. Gradually add flour, cocoa and salt until mixed well. Add vanilla and chopped nuts.  Bake in 13x9 greased and floured pan for 30 minutes.
Take out of oven and turn temperature up to 350.  Sprinkle 1/2 bag marshmallows over top of cake and return to oven for about 5-10 minutes until marshmallows are fluffy.  Take out of oven and let cool. Ice cake when completely cool.

1 box confectioner sugar
1/3 cup cocoa
1/3 cup pet milk
 1 tsp vanilla
1 cup chopped nuts

Mix butter and sugar together until blended. Add cocoa and Pet milk, then add vanilla and nuts. Spread over cooled cake.


Grits casserole

Grits Casserole

What you'll need:

4 cups of water
1 teaspoon salt
1 cup grits
1  1/2 cups grated cheese
1 stick butter or margarine
1 cup milk
4 eggs, slightly beaten
1/4 teaspoon red pepper
1/2 teaspoon garlic powder
1 pound breakfast sausage, browned and drained

Bring water and salt to a boil.  Add the grits, cover and cook on low for 5 minutes. Remove from heat.  Stir in 1 cup of the cheese and the margarine until melted.  Add the milk, eggs, pepper, garlic powder and sausage.

Pour into a greased 9" x 13" pan.  Top with the remaining 1/2 cup of cheese.  Bake at 350 degrees for 1 hour.  Let stand 10 minutes before serving.


Meatloaf Cake
 
 
 
No, it's not a naughty euphemism; it's an actual cake made with ground beef, frosted with mashed potatoes and glazed with ketchup.
